A great sparkling wine from Marche
The
Blanc de Blancs Classic Method by Cossignani L.E. Tempo arises from the desire to produce a great sparkling wine in the Marche territory. The estate is managed according to organic farming principles, with inter-row grassing to maintain soil fertility and promote biodiversity. The Pecorino vines, 30 years old, are cultivated at an altitude of 200 meters above sea level with a south and southeast orientation, on soils composed of limestone and sandstone. Harvesting is done manually in the second half of August. The grapes undergo cryomaceration for 24 hours before gentle pressing. The must is cold decanted and then fermentation begins, partly in cement tanks and partly in oak barrels, with partial malolactic fermentation. The final blend is created the following spring. The second fermentation takes place in the bottle according to the Classic Method, with a stay on the lees for 18 months before
dégorgement.

Blanc de Blancs Sparkling Wine Cossignani L.E. Tempo offers immediate pleasure thanks to a well-calibrated aging that preserves the varietal characteristics of the Pecorino grape. Advice on Blanc de Blancs Cossignani L.E. Tempo
Whole cluster grapes are pressed with a pneumatic press at very delicate pressures with a grape/must yield of 40%. The must is cold decanted and then alcoholic fermentation begins, partly in temperature-controlled cement tanks and partly in selected barrels. Malolactic fermentation is partially carried out and the base wine rests in the tank until the spring following the harvest.
The sparkling wine presents with a bright straw yellow color with light greenish hues. The foam is soft, the perlage delicate and persistent. On the nose, there is significant aromatic freshness characterized by interesting olfactory complexity with nuances of white broom flowers, fruity notes of Sibillini pink apple, and delicate woody notes. In the mouth, it is fresh, dry, and savory, with balanced aromatic intensity, excellent persistence, and structure.
The 24-month aging on the lees allows it to pair well with both tasty appetizers and fish starters and main courses.
