Marche Bianco IGT 0.75 L – Crocifisso

The Marche white wine Crocifisso by Vittorini is a structured, savory, and smooth wine, distinguished by its complexity and long persistence. In the glass, notes of ripe yellow fruit emerge, giving the wine a rich and enveloping aromatic profile. The vineyards used to produce this excellent white are cultivated with two different training systems. Pecorino prefers the Guyot system, with canes renewed every year, while Sangiovese is trained with a spur cordon with five spurs per vine. The Pecorino rows are spaced 2.2 meters apart with vines at 0.6 meters, reaching a density of 7,575 vines per hectare, while the Sangiovese rows are spaced 2 meters apart with vines at 1 meter, totaling 5,000 vines per hectare. The harvest takes place in the last days of September, with the grapes collected exclusively in 50-liter crates, thus ensuring the integrity of the bunches until arrival at the winery. Here, the grapes are destemmed and subjected to a gentle pressing. The must, before fermentation, is protected from oxidation with dry ice, preserving the aromatic precursors present in the skin thanks to the hyper-reduction technique. The fermentation of Crocifisso occurs at a temperature of about 9°C and lasts for 60 days. Subsequently, the wine spends 10 months on its own lees, without the addition of sulfur dioxide, aging partly in steel and partly in used barriques. This process gives the wine a complex structure and a perfect balance between smoothness and freshness.
